JESSICA S.: Some Food for Thought

Hi, Jets Fans! It's Jessica S from the Flight Crew, I am so excited about spring and the warm weather coming soon. This to me is a sign that before you know it, the 2011-12 season will be starting. Time flies so fast. It feels like just yesterday we were getting ready for our first season in the new stadium.

I have been preparing for the auditions and cannot wait to hopefully be back out on that field again. For me, part of the process of preparing for auditions is going to the gym and working on some cardio training because it helps you through the audition process. With all of the great choreography, it requires good strength and endurance. I've also been trying to eat more vegetables, because they are rich in vitamins and are low in calories, along with protein, which can be found in beef, chicken and fish. Some of my favorite vegetables are peppers and spinach.

One of my favorite fast recipes is veggies with baked chicken. I usually make a big batch and then I can eat it for a few days either for lunch or dinner.

I would like to share with you how I prepare it.

I scout the produce department at the grocery store for lots of vegetables. I usually pick green and red peppers, zucchini, mushrooms, sweet onions, sugar snap peas, broccoli and fresh spinach.

Rinse and cut into any size you would like. Add a tablespoon of olive oil and 1/3 cup of water into a pan on the stove over a medium flame. Once this is hot, add the vegetables. Cook them until they are tender to your liking, stirring them occasionally. Turn the flame off when they are done and put a lid on to keep them warm.

While this is cooking, take a 3-to-5-ounce piece of boneless, skinless chicken breast, cut into strips and season it with a pinch of onion powder, salt and pepper and put it in the oven at 350 degrees. Cook until done, which is about 20 minutes.

After the chicken is done, add it into the vegetables. If the vegetables have cooled off, you can warm them up on the stove for a few minutes, stir and serve. This is a quick way to enjoy vegetables and protein without a lot of fat. I hope you try it and that you enjoy it.

I cannot believe I will be auditioning for my fourth year on the team. The friends I have made through the Flight Crew and the fans I have met really keep me excited about the new season coming up. Hope to see you on Game Day and any other appearances coming up.
